The one ingredient I find a tad odd is the bay leaf, as it strikes as a thing that would not be readily absorbed by the meat.

I stayed at the Cosmopolitan in Vegas and on their breakfast buffet they had a whole slab of smoked bacon that they roasted and sliced like prime rib ........ not crispy like im used to but it melted in your mouth like butta

Whole Foods has Berksire pork belly $4.99 lb.

Not sure around Lafayette but I'm sure it's easy to find there. I would think Heberts in Abbeville would be a good source and try all your boudin stops. Dons, Best Stop, Poches etc...

Looks good. Try it with duck breasts next time.

So does a vendor at the Red Stick Market downtown, and for less if I'm not mistaken. Need to get down there early though. He ran out by time I got there around 10ish. I did pick up some nice berkshire shoulder I'm about to make some tasso out of though.

The Mexican grocery on Florida at wooddale has pork belly for 3.29/lb. just started curing mine. Gonna experiment with it some.

holy crap, I want to try this.

I've never had pork belly by itself (notbeing made into bacon of course) but I have seen it at the Chinatown Market on Berman. I know Company burger has it as the "corn Hawg" but I never tried it.

But man, I want to buy some and smoke it. A friend of mine just got a trailer smoker too I'm going to borrow it for the Saints game. You'll see me on Poydras near Galvez. May try this on the pit.

Since reading this thread last week, I have decided to make my own. Letting mine cure for 6 days. Started to cure on Wednesday. Should have my new iPhone on Monday, so I will try to post some pics then.
