I love hard boiled eggs in it or on the side. I keep em in the fridge for snacks.

I use chopped hard boiled eggs in every salad I make - all meat salads, potato & macaroni salads, cornbread salad, green salads, etc.

I do this as well, periodically. I could eat eggs every day. Love them.

My mom always puts hard boiled eggs in her chicken salad. Not my preference but I'll eat it if somebody else makes it.

As far as the grapes and nuts go .. that seems to me a new thing? I never really used to see that in my family and group of friends and relatives growing up. Not big on the nuts but halved purple grapes in a chicken salad ( a la Cush's in Shreveport ) can be quite good.

-rotisserie chicken from grocery, pulled and chopped
- finely diced shallot or onion
-finely diced celery 1/2 as much as onion
-sweet pickle relish, a little less than the celery amount
- teaspoon or so yellow mustard
- mayo to you preferred consistency
-garlic powder, black pepper, salt
- a couple hard boiled eggs chopped (optional)

I thought you had to!

I like mine the way grandma did it:

boiled chicken with aromatics, debone and fine chop with knife, one stalk celery fine chop, four eggs diced, one sweet pickle fine chop, green apple diced, salt, pepper, mayo to make to your consistency, ground mustard on your roll or bread.

this in a pinch when I don't want to go thru the boiling chicken part

I made some the other day with shredded leftover rotisserie chicken and homemade rosemary garlic mayo that was some of the best I have ever had.

If the chicken salad doesn't have it already in it, I just cut a bite of egg and put some chicken salad on it. Chicken salad and eggs can touch!

Now, I don't usually put it in the Neiman Marcus chicken salad with the nuts, grapes and whipped cream. They would be fine in it, though. Calvin's already has them, but they're chopped too small, so I add them.

Some good sounding recipes in this thread. I don't know if y'all have Newks in Louisiana, but I love their chicken salad (and pimento cheese). They sell each by the quart/pint, etc. daily. But I definitely need to learn how to make it at home.

Hmm that's a good idea for a party .. boil eggs, scoop out yolk, mix yolks w/ chicken salad sans nuts/grapes/apples/celery .. get it to a more whipped consistency then "stuff" the boiled egg white with, arrange on a tray and service.

you could even put a dash of paprika over them!

Roasted chicken from the deli, debone and tear.
Dill pickels and green apples in chopped ruff in processor and add to chicken with mayo and pepper. Simple but that's how I like my CS, I find people try to do too much with a simple dish like that.
