So I boiled them, chopped them, and mixed with jalapeños,sweet pickles, and a splash of mustard. Delicious. Y'all don't wanna hear about the aftermath. Thanks and good night

I realize you are past the point where it matters but as to the general question - you should toss hot dogs, sausages and other deli-type meats once they are past the expiration date. The concern here is Listeria, a bacteria that can grow in processed meats, even under refrigeration and can lead to meningitis.
Most non-meat based processed foods can be eaten well past the date on the package. Canned food in particular will remain safe to eat almost indefinitely although the taste and quality will begin to degrade.
