Homemade Mayonnaise with an immersion blender

Holy. Smokes.

This is about the easiest thing I've done in the kitchen, and it came out perfectly. You literally just put the ingredients in a jar or other steep container, let the oil separate itself out in a few seconds, then blend.

Serious Eats - 2 Minute Mayo

I've made it in a food processor before and it's a total hassle. It's also easy to mess up because it breaks easily.

This alone makes owning an immersion blender worth it.

I really don't get why I don't like mayo. I love all of those ingredients.

Maybe I'll try homemade.

Homemade is infinitely better. It's got a good balenced flavor.

I do it in my blender all the time. I use the yolk only. Add roasted garlic or a bit of adobo sauce or sundries tomatoes. All kinds of additions. Better than store bought and I'm a Blue Plate pimp.

When it's homemade, it's mah-nez. i'm definitely trying this next time I make tuna salad. I have an immersion blender, but don't use it enough.

My immersion blender is my favorite kitchen tool.

Makes a damn fine hollandaise too.

Love mayo and my wife brought an immersion blender a month or so ago. Will be making my own going forward.

About a few weeks if your eggs are good that long. I think the age of the eggs is a factor, along with the acid used which helps prevent growth of bacteria. I've read you should let it sit out several hours after making it so the acid can do its thing, but I'm no food scientist.

I have a mayo maker made by Wesson, I think it's about 50 years old. It looks like one of those "pumps" on the back pages of the girly magazines of old.

I have one from my grandmother. She told me they gave them to you when buying the oil.

Mine is pretty rusty.

Martini,, that's mine, I use it often. I had a case of them and somehow only have 1 now!!

Those are from like the 30's and 40's. I've never used it because I just use the blender. Looks like work.

I've got an old Dasy butter churn too.

But I prefer to make butter in my Kitchen Aide mixer.
