Homemade BBQ sauce

How long before it goes bad in the fridge?

Stick a finger in it and taste. If the taste is still the same, it is still good.

One of the recipes I use says it can be stored in the refrigerator for 1 month.

Steven Raichland's Coca Cola BBQ Sauce
I make this sauce all the time and everyone loves it. My sister in law would eat it out the jar if i let her.
In terms of storage, i guess it depends on what you use in it. If using fresh, non-dehydrated ingredients, then i assume it won't last as long.

1 cup ketchup
1/4 cup Worcestershire sauce
1 teaspoon liquid smoke
1/4 cup A-1 steak sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Combine the ingredients in a heavy saucepan and gradually bring to a boil over medium heat. Reduce the heat slightly to obtain a gentle simmer. Simmer the sauce until reduced by 1/4, 6 to 8 minutes. Transfer the sauce to clean jars and let cool to room temperature, then refrigerate until serving. The sauce will keep for several months, refrigerated.

Mine lasts for years but it also has apple cider vinegar as an ingredient.

I would think how it is stored is also important
Is it in a jar or is it in a bowl with cling wrap on top?

My guess is that a vinegar based sauce might last forever

Anything with a decently sealed container would seem fine. What would go bad in that recipe?

Mine has vinegar, but I wouldn’t call it vinegar based. It’s more St Louis style than N Carolina.
That said, it’s in a squeeze bottle with a cap, and I’m guessing that the ketchup that I used was full of preservatives.

I've got a hoisin based one and my own spicy one that's been in there since last summer. Still good.
If it's not growing anything, it's still good.

I make No. 5 sauce (ketchup, vinegar, brown sugar, Worcestershire sauce, rub) and keep it in squirt bottles in the pantry for months. It is never refrigerated and lasts forever (same as my ketchup and mustard and store-bought BBQ sauces).
