Are you starting out with RO or Distilled water, or just changing the tap water?

I may be asking you a bunch of questions then, because the bourbon stout I make next will be my biggest beer yet, and I hope to not have issues with fermentation. May try to make a starter for the first time.

I did the starter last night, so it'll be at 24 hours before I pitch.

Doing starters is really easy. If you order from Austin they have a starter kit that isn't too expensive.

I made a big starter with 2 packs of wyeast for mine. It was a big beer. I don't quite remember the OG, but it finished around 1.02. It ended up about 9.2%.

I use a 2000 ml flask. Perfect size all around. Fits on the stove. Easy to clean. Allows me to step up pretty easily.

I have 2. A 1000 mL and a 2000 mL. You really only need a 1000 mL, or a large mason jar. I don't put mine on the stove though. I have a small pot i use to make my starters. I then pour into the flask once cooled down.

I googled making a yeast starter. There is video of one with a nerdy looking guy making one. It was pretty helpful.

I make starters for all of my brews.

I'm pretty happy with my tap water based on taste and averaging the water reports for the last 3 years. I'll add a pinch of K2S2O5 but that is about it. The only other thing that jumped out at me is low Mg and I'll have to do some reading up to see if that is even an issue.

Where is the best place to get flask? I'm just using glass jars right now but all those semesters of lab work have me longing for some flask of my own

I got mine at Brewstock here in town for like $15. I used to use Carlo Rossi jugs, but those were a pain to clean.

Got mine online. Either Ausin Homebrew or morebeer. i can't remember. I think i got one of them at brewstock also.

Low Mg shouldn't be an issue. You'll get all the Mg you need from the grain/mash if your brewing all grain.

I use the yeast calculator on MrMalty.com to calculate my starter size and it almost always calls for a starter that is 1L or more. My experience has been that any starter larger than 1.5L will blow out of my 2000ml flask. So I almost always use my 5000ml flask.

Question regarding my saison.

I would like to brew next saturday. However, i will be out of the country from the 12-22. With a saison, would it be ok to leave it fermenting for 5-6 weeks?

I was considering primary fermentation for about 2 weeks. From there i could either bottle, or secondary until i get back (an additional 2-3 weeks). What would be your suggestions?
