Finally have time to brew.....last time was Feb 3rd.
Brewing a 10 gallon clone of the original JK Black Metal Stout. Gonna sour 2 gallons and brett 2 gallons.

Also made a gallon of starter wort using 1/3 pale DME and 2/3 wheat DME, and split between two jugs. Will add my dregs culture to one of them and a jar of rds' brett to the other

Anyone brew this weekend?

My brew last Wednesday turned into a circus. What was supposed to be a quiet day of brewing turned into a cluster frick about 30 minutes into the mash.

The highlight of which was accidentally throwing in my flameout hops at 60 mins and having to recalcuate my IBUs and change boil time on the fly.

Next on deck is a DIPA for brew at the zoo. Have the malt bill worked out.

94% 2 Row
4% Carapils
2% British Light Crystal

Now I just need to decide if I'm going tropical/citrus fruit bomb or a more traditional fruit/pine/dank blend.

I brewed as well. Brewed 10 gallons of a session IPA made with 96% Red X Malt, 4% C20. So it will end up being a red session ipa. The malt has a starting srm of 15. Crazy.

Anyways, I overshot my mash temp just a little, the mash sat at 154/155 for about 15 mins until I got it cooled down to 151. Then I managed to not pay attention during the sparge and all of a sudden my 15.5 gal kettle was overflowing. I took 3 gallons off, boiled down to 1 gallon and added that back into the final beer. Ended up with 11 gallons of 1049 wort which is basically what I wanted. But I had to boil like crazy the entire time. Probably ran through almost a full tank of propane.

Carboys are fermenting nicely with Omega DIPA yeast at 62 now.

Ran out of CO2 as I was carbonating the table beer. I think I got short changed with that fill, it only lasted half the time as the previous tank

I think I need to pick up another tank to keep around as a spare

Got to hate that. CO2 is one of the more annoying aspects of brewing for sure. PITA to go get it filled and always seems to run out at the worst time.

The other day I was pricing a larger tank when I was swapping my 5#. I'd like the 5# to purge and a 10#-20# for the keezer. Sucks running out. Doesn't help that my regulator gage is fubar and doesn't tell me how much I have in the tank.

My brewing is on hold for a month or two until we move. Bad news for my pipeline, but good news in that I'll have a house and I can have all my equipment at home and not at my parent's place. I need to do some keezer maintenance anyways. I need to do a deep clean and replace the lines. That and my girlfriend wants a nitro line, so I might look into doing one of those.

Good deal on getting a place. Wife and I would love a nitro tap too and we may end up doing that but we just maxed out the number of kegs in the kegerator. So might have to swap things around or look into other options.

I'd love a bigger tank, but I think it would have to stay outside my kegerator and I'm nervous to drill a hole through the side of it

I have a 20lb tank and a 15lb tank and I still manage to run out of CO2. I'm also lazy and hate driving clear across town to fills tanks.

That said, the people and service at LA Fire Extinguisher have always been great.

Hooked up the filled tank and sprayed everything with starsan to check for leaks and found none

While I was in there I dropped in a couple tea balls of simcoe pellets into the smash that's a couple months old now to liven things up a bit

I use grogtag. They are a little pricey though, but they are very good quality.

I think it's $20 or more for 24 of them. Considering that a batch of beer ranges anywhere between $25-50, i'm going to start looking into printing my own.

ouch... that's like 2 lbs of hops right there

I've only labeled twice bottles twice, but I just printed them on my ink jet and applied them with whole milk.

Labels stick fine and come off with no problems. Probably cost me more in time than materials.

I've seen other people use a knox gelatin solution with no issues.

I may need to research this method. With a toddler at home I have lots of whole milk.

I've used these in the past. They are removable, so they are easy to take off the bottle so you can reuse the bottle without the pain of a label that doesn't want to let go. Make your own design, print 4 to 6 labels per sheet and cut them out yourself.
