The yeast smack packs and vials don't have nearly enough yeast to healthily ferment anything over 1050 individually
This is especially true if you're ordering online during the summer. This summer I've gotten smack packs of yeast in from AHS and Northern that were almost worthless.

Have any of yall ever attempted to make 2 brews in one day?
I'm very tempted to brew my oatmeal stout and my version of a fall ale on the same day.
I'm just worried about being out there brewing for 9+ hours. Also, i'm wondering how much more cleaning i would be doing.

For me the issue about 2 beers in one day is that I only have one burner. So it becomes difficult to manage both beers simultaneously. If I could do both at the same time effectively I would start one, then once the boil started on the first one start mashing on the second one.

I think i'm brewing my oatmeal stout next sunday, the 8th, and then my fall ale the 15th. That way the fall ale will be ready by November.

2 vials of White Labs WLP007 Dry English Ale.
I'd be nervous doing that little. Personally,I wouldn't do something that high without pitching on an existing healthy yeast cake. I'd dump in some yeast nutrients if you have any.

I'd also say to LST that saisons should be very easy for him and a better style to brew with no temperature control because they like to be hotter.
this is one of the reasons I'm looking into brewing saisons, at least until I have a way to control fermentation temps.
as for the double-pitching conversation, the only time I used two vials was WLP004 Irish Ale, and my OG was 1.084, and it fermented like a champ. Was 1.028 after a week and 1.024 at bottling, with the bourbon added

I did that. It appears this will be a learning experience.
Is there any harm to pitching dry yeast later, or making a starter then pitching it later?

Not at all. The yeast will eventually start working, it will just have a huge lag time and will struggle towards the end.

It might, but it also might come out being fine. I'm pretty anal when it comes to yeast, so take my advice with a grain of salt.

If it gives you any problems starting up come get my O2 and give it a hit.

Got my shipment in yesterday for my all-grain stout.
I got a free 7.5 gallon plastic bucket fermenter, which i did not order. I've emailed them to see if they made a mistake.

Bad arse mistake. Where'd you order from? Seems like everyone has been having specials recently.

Bottled my sour wort saison today. The OG was 1.045 after the lacto did its dirty work. It was down to 1.004 today for about 5.5%.
Also, got this bad boy full and stashed away in the back of our monster closet. I still don't understand why our closet here in Texas is bigger than our 1st apartment in DC!?

I finally bought the kit! I'm going to buy the car boy from our local brew shop. Buying it off the website added $25 extra dollars on shipping. The kit came with all the ingredients for an Irish red ale, so I guess I'll brew that first just to get all the processes down before reaching out.
