Guilty. It went down the drain last night to poison the sewer rats. The fermenter is currently going through a bleach soak.

I'm going to brew something today but not sure what. I've got some 2-row and acid malt that needs to get used and a big bag of Texas grapefruits. I'm thinking a grapefruit saison? I also need to bottle a batch of 100% brett pale ale so that I can get some boxes shipped out.

I debated brewing today. Probably not going to because I'm feeling extremely lazy. I drove past the LHBS on the way back from my run and got in the turn lane to pull in, but then kept going. I think today is just going to be a RDWHAHB kind of a day.

I also have some wheat, so here goes:

5 lbs 2-row
4 lbs Wheat
1 lbs Acid
0.5 Oats
Crap load of Grapefruit
Dregs from a Crooked Stave Vieille

Looks good to me. What hops? Got any sorachi ace? Those would be killer in that.

I've got Simcoe and Citra in the freezer, so a combo of those.

Mashed in low and going to mash low, for about 90 minutes.. err I mean 10 hours Probably won't get around to the boil until after the kids are in bed tonight.

Well, I brewed my french benefits saison using wyeast french saison yeast. Apparently I didn't adjust my temp controller for heat, and it was constantly heating to 81 degrees as of 10 last night. I quickly adjusted it and it is currently resting at 78. I opened the freezer door to let cooler air in to cool it further. Can I expect problems from too hot a ferm early on? I know it's a saison style yeast so I have some wiggle room with that temp. Just wondering.

Also, I got to use my new stir plate. I had fermentation going within a couple hours of pitching. That thing is awesome.

Brewed a hoppy pale ale today. Mashed low for a dry finish. FWH with Simcoe, then Simcoe-Citra-Amarillo-Mosaic additions at 10 and 5 minutes and whirlpool once I got it down to 180.

Oh, and I hit my target OG exactly. 1.060. Other than the heat issue, brew day went off without a hitch.

Well, just wrapped up my first brew day. Hopefully I didn't screw it up too bad. Few screw ups that gave me 20/20 hindsight.

Already made a list of about three or four things I really want before attempting this again. Cooling the wort was my biggest challenge. My opinion is thay took me way too long to bring it down to the right temp.

Had a full 5 gallons to chill down to yeast pitching temps?

It was about 4 gals that I brought down to about 90 degrees pretty quick. I figured adding another gallon of really cold water would get it the rest of the way. It didn't.

Had to drop all five gallons about 10-15 degrees.
