I really want to brew another batch of my Brett pale ale next weekend. That means I have to bottle my red farmhouse ale today and rotate everything to free up a fermentor.

Today was the first brew day for Kennypowers816 and myself. We inherited a kolsch kit with our brewing equipment so decided to start with that. Replaced the hops and yeast just to be sure to use fresh ingredients. Recipe was:
6lbs Pilsen LME
1 oz perle German hops
1oz tettanger German hops
Whitelabs German kolsch yeast

Brought LME to a boil and added all hops for a 20 minute boil. Cooled to 70 in under 30 minutes and into the fermenter soon after. We'll see how she comes out

I definitely felt a little dumber throughout the process than I thought I would. I felt pretty prepared. One of those things that seems like you will beconstantly learning.

Forgot to include that OG was 1.068. May be a little high for the style, but it's all good.

That'll turn out a 7% kolsch right?

One of our IPAs is only 1.061 OG.

Just a heads up, if any of y'all are in NWLA, great raft is having a homebrew challenge. Pickup wort of commotion and have at it. Should be interesting.

When I brewed my Zappa Dust, I brewed 2 1/2 gallons extra. Put that in a clean but unsanitized carboy and let it sit at 68 for a week. Some type of funk krausen/pellicle developed and it smelled ok. Pitched my Westmalle harvested sacchro and dregs from a JK and Avery Brett Saison. Has been sitting for a month and it is nice and tart.

I harvested some pecan branches a couple years ago for grilling/smoking and decided to pitch some of that. Pecan is so hard I had to use my Reciprocating Saw to cut it into cubes.I also soaked some in bourbon and pitched them into a keg of too cinnamony porter to see what happens.

That's awesome really. I with one of the local breweries here would do something like that.

Deep Ellum Brewery just had one where they supplied the grains and hops. They had a little festival last week with all the homebrewers pouring their beer.

brewing today myself. was shooting to mash at 156, and hit 154.4
should be fine, so I didn't bother adding any more hot water.

Things are going fairly smoothly over here. Hit the mash temp exactly at 152 now waiting for the rims to finish the mash out. Once sparging is finished I have to run and get a hop bag from a friend and we should be good to go

And ended up missing my OG. Think I figured out why though, I am not boiling off near as much as I used to, so I ended up with close to 7 gallons after boiling, rather than 6.

I'm still honing my system in. Ended up exactly where I was to OG wise at 1.061 but have a little more than 10 gallons, so while it shouldn't be an issue just want to be able to have it down to a science

HungryFisherman figured out what we did wrong... We measured OG with our undiluted wort. Rookie mistake.

We did some very rough calculations and think our real OG was around 1.037. Too late now to know for sure though as our yeast is working its magic

My software says 6 lbs Pilsner LME should be right about 1.043 for 5 gallons or 1.036 for 6 gallons.

We put 3 gal in the kettle and 2.5 in the carboy before adding the wort. We left a little in the bottom of the kettle but we got most of the liquid out. I guess we have somewhere around 5.25 gal in the carboy now.
