Ended up a 1.052 for the Red IPA when I calculated 1.070... definitely on the low side. Intended to mash at 153 but it came in at 151, don't know that that would cause the OG to be off by about .02, but maybe. Also could be the red wheat calculating wrong on BeerSmith (didn't get that add-on) but again seems like that wouldn't affect it too much, it was only 2 pounds of the grain bill.


Next time I'll have to adjust up a few degrees on my strike water, can always add a little ice if I hit it too high.

Either way, it's fermenting along nicely.

I realized this morning that my fermentation chest was a little low, beers were sitting at 59 degrees. Damn temp probe from China that only shows in Celcius . I wanted to ferment low but that was a bit optimistic.

It sparged to about 6.5 gallons, which is what I usually do, then with boil off and absorption loss I usually end up right at 5 gallons.

BeerSmith might not know that I'm sparging to that volume though, I've never really used it before.

But you sparging to that amount shouldn't change how much sugar is in the kettle. Hell you could sparge to 9 gallons and boil off 4 and you should have the same (if not more) sugar at the end. As long as you end with the target volume.

True, so I guess I should say that I'm not sure what target volume BeerSmith was calculating for, as opposed to sparge volume.

Doesn't really matter, I think it'll end up a tasty beer and I'm fine with a lower abv on this one.

my plan with this porter was to rack it on to some oak cubes and a pound of chopped, toasted pecans. When I found my oak cubes yesterday I realized I only have an ounce of them, so I don't expect to get much out of that. I also am not sure I will bother racking it, just drop in the cubes and pecans after a week or so, once fermentation is almost done. I know we have had the discussions on whether to rack or not to rack, but can anyone give me a reason why I should rack this beer? I will probably let it go for 2 weeks after adding the pecans.

Just my opinion, but I would be VERY surprised if the ATC allows those prizes to stand.

In my conversations with the ATCs legal representatives they consider all prizes outside of medals, ribbons, and certificates payment for homebrew.

Companies donate items to competitions to give away as door prizes or to winners of a particular category of beer. Things like stickers, glass wear, t-shirts, low dollar brewing equipment. Door prizes are given to members, guests, and people who assisted putting on the competition. Entry into the competition is not required for door prizes

ATC: Awards can only be of the same kind as enumerated in the statute. Door prizes that are not awards for homebrewers are allowed.

This shouldn't upset me as much as it does. Why in the hell do they give a shite about this? It makes no sense to me at all. When I win a door prize or an award, I don't think: "Hell yea I just got paid for my homebrew".

After going back and forth numerous time with them I've just decided that as homebrewers its almost better to ignore the laws/ATC and just do what we've always done when we can.

I made the mistake of asking them about the new 'notice to conduct sampling' that the statues now require to be filed with the ATC before special events. It's a paperwork mess and makes no sense at all.

The people over there have been really nice and helpful, but I think the direction they are getting from above is to give everything the strictest interpretation possible.

Yea, i know better than to ask. I do not think that there is a lot of teeth in it for someone like me, and really doubt there is a lot of issue for anyone with a license.

I made the mistake of asking about Iron Brewer this past year and was worried that they were going to come shut us down.

Well if it's wort, it would be pre-fermentation... so even more can be done with it.

Doesn't really say, but they do say to bring something pre-sanitized, so that would imply post-boil.
