Mash efficiency measured at 72%. Just as i figured. Added too much water during mash. Should still make a great beer though. Plus i have to add the turbinado to the boil, that will help in getting my fg to desired range.

Everything has gone perfectly. Have about 10 more degrees to chill and will be finished in almost record time. Amazing day to be outside.

I'll buy one of the yeast from you BottomlandBrew. I should have jumped on it and not shyd away from ordering 3 wild yeasts

Just finished up with everything. A saison and Tart of Darkness clone got brewed today. I played around with my crush and used my new false bottom. Ended up with 81% on the sasion, and 79% on the ToD clone. that's a good 10% or so higher than normal. I drained the hot ToD clone directly into the whiskey barrel. We'll see what happens.

Frat, I'll let you know if I hear back from the guy on the yeast. Nothing as of yet.

Finished up about 1.5 hours ago. Brew day went well. 5.5 gallons of brew with an og of 1.057. Target was 1.056.

Mash eff at 72.2%. Brew house efficiency of 75%.

Got my fermwrap hooked up to temp controller and it is working perfectly.

Only problem is my yeast may underperform due to the age. Have another pack getting here Wednesday.

When do you think this will be ready to drink? I'll be interested to compare it to my 100% brett baltic porter. I'm going to let it sit for a couple or few more months but it already has a very nice tartness to it.

I haven't the slightest idea. My first time using Roselare. I'll let it go until I like it. Hopefully my barrel hasn't picked up and bad funk.

If fermentation is any indication of a quality beer then I am in great shape. I have never had fermentation kick off as crazy as my beer today. I pitched on a yeast cake, which I do often, left the house, came back under 4 hours later and a half gallon of beer is on the flow of my freezer. It was a fing volcano of yeast. It smells fantastic though. Lots of late addition hops will do that.

What size barrel do you have? I've seen some 20L ones but people want like a $100 for those and I can get a full size wine barrel for $125. I would really like to get a 7.5 or 10 gallon oak barrel for fermenting in and another one around that size for long term aging. I have the room (3rd car garage) for a couple full size wine barrels but am worried about keeping them cool during the brutal Texas summer. If I could figure that out then I would pull the trigger.

I have a 5 gallon whiskey barrel. Used it once before, but I kind of let it go after that. I've done everything I can to try and get anything harmful out of there. A big barrel would be nice, but I can't brew anywhere near that much to fill one. That assumes my space isn't an issue, which it is for me. It'd have to be a club brew for me to fill a 55 gal barrel. The 5 gallon is a really nice size for me. Keep your eye open. They come on the market every now and then. I think mine was $79. Can't remember exactly. Someone else might as we picked them up that the same time from Brewstock.

Brew day! Time to make the next batch in the Crosscut Single Hop Pale Ale Series. This round I will use El Dorado hops. The description says they offer flavors that are candy-like, pineapple, pear and stone fruits.
I've had a single hop pale using them before, from Black Market, and it was fantastic. Wouldn't be surprised if these are the next trendy hops, like Mosaic is now.

Next time I make this I am going to estimate about 1.5 gallons of trub loss. There is so much junk in the bottom of the kettle I'm having a hell of a time getting to 5 gallons
