Well frick me. Thanks to some shithead baseball writers, Biggio missed the HOF by 0.2%, so we will not be going to Cooperstown this summer, thusly not going to Vermont.

Sights are now set on a West Coast trip involving Russian River & Lagunitas, or going a little farther north, to Oregon (Bend)

Received my starter brew kit from Austin Homebrew last night. Everything looks great except the dry yeast pack said "use before Jan 2014". I've emailed them and they are sending a new pack. Hopefully it will arrive in time for me to do my very first brew this Saturday. I'll be brewing a Kolsch Ale. Wish me luck! and feel free to give me any advice.

Relax and have a few brews while brewing! It is pretty hard to mess up a homebrew

I haven't brewed a Kolsch but it looks like a good style to start with. What kind of water are you using? If you use tap water, then you need to check your local water report and see if they use chlorine or chloramine. You could also play it safe and use bottled water since all the salts and what not are already in the extract.

I'll ask Matt about it. They have a Russian imperial stout that's upwards of 9% and he's brewing a big arse barleywine that will be ready for their first anniversary in July.

I wasn't planning on it. I was asking because a friend was looking for some and you can only find it on amazon by the 10' or more.

Asked LA Homebrew and they didn't have any of it yet either.


Trying to not pay for shipping period these days.
AHS announced that they were ending free shipping on kits and I bought a kit from them that day.
Brewing that this weekend.

Did something that I haven't done in a good while by making a starter last night. Knew that lagers needed a bunch of yeast so....


Also going to be using RO water from the store and adding gypsum and calcium chloride which is something else I've never done.

Should be an interesting brew day.

I've been using RO water for a few years now. It's pretty easy once you get the hang of it.

It adds another step to preparing for my brew day, which sucks, but I've been pleased with the results and the difference it has made in my beer.

Any food grade vinyl tubing that is rated for over 220F is ok to use.

Personally I prefer the silicone tubing because it's rated for much higher temperatures and it tends to be more flexible.

Not sure how often I'll mess with it from here on out but I guess this is the first step in that direction.

I've always used drinking water bought at the store for brewing. Is this something I should have been doing all along?
