If there are still smoked turkey legs around, those were really good and much better than any of the quick places you could go without reservations, at least in Magic Kingdom.
MK was the only place we didn't make lunch reservations for a few days. We had them for all other lunch and dinner meals while we were there.

The bowling alley splitsville has legit food. The sushi is very good.

I would have to say that a Disney bowling alley would be the only bowling alley I would ever get sushi from.

Since you probably won't get reservations this short out, here's a couple that don't require them:
Another vote for Yak & Yeti.
EPCOT has Food & Wine fest going on right now. So literally every country will have a food booth and it's all usually pretty good.
The new quick service restaurant in Galaxy's Edge in Hollywood Studios (Docking Bay 7) is pretty good.
In Disney Springs the Polite Pig is very good. Haven't checked out Chicken Guys yet but heard good things - a good option if you'll be having kids in tow.

Your reservations are really good. You'll like both Be Our Guest and Tusker House.
Here are our fav quick service in each park:
MK - Sleepy Hollow and Pecos Bill's (both already mentioned) Sleepy hollow is a must do for us. Pecos Bill's is like a taco bell, but it's never crowded and you can eat inside. It's better than the burgers and fries and hot dogs you'll find elsewhere.
Epcot - as has already been said, pretty much anywhere in the world showcase is going to be fine. We usually get a small snack and beer from each country.
Animal Kingdom - I'm not going to argue with the Yak and Yeti reco's, it's great. It can get crowded though and it's not cheap. We really like Satu'li Canteen in Pandora for quick service. It's quick and good food.
Hollywood - PizzeRizzo is pretty good for quick cheap pizza. The ABC Commissary is not what I'd call a must stop, but if you have picky eaters they'll find something here. It's usually not busy, and you get to eat indoors in AC. We usually don't focus on food at Hollywood these days because there is too much to do and we are usually only here one day.
As far as what else is "on campus" there is a Portillo's hot dogs, which is a hot dog fast food joint from Chicago. If you are a chicago dog fan, or even if you aren't, I highly recommend.

jalapeno/cucumber margarita from the tequila bar at epcot in mexico.
NOT the one on the street, have to go in the temple thing and downstairs.
The california grill is cool, if you time it right you could see the fireworks from magic kingdom at night. Dont know if I would take the kids there, but Im sure it isnt an issue.

Nothing is really "hidden." (R) means reservations strongly suggested.
That said, Flametree Cafe in Animal Kingdom has pretty damned good BBQ.
50's Primetime in Hollywood Studios (R) has sold grub and a fun atmosphere (meat loaf and fried chicken are legit). I hit the Brown Derby last time I was there and it was good (R - usually).
Flatbreads at Pinnochio's in Magic Kingdom w are good. Cosmic Rays's is standard counter service, but it's a good place to get inside and into some AC.
The Mexican place at Epcot (in the Pyramid) is damned good. Le Cellier in Canada (R) serves a quality steak.

The amount of amazing places to eat is such that you could be there for a month and still not get to everything.
Of course, the amazing places are very expensive but it’s Disney.
Topollinos on top of the Riviera is incredible. It’s my favorite resort restaurant.
The fried rice at Yak and Yetti quick service is awesome. For a nice sit down try Tiffins in Animal Kingdom. If not eating, at least go to the lounge for drinks and try to sit on the deck.
Sanaa at Animal Kingdom Lodge is also great. Go for lunch so you can see the animals and you MUST get the bread service.
There’s nothing good in Magic Kingdom so that’s one day I always plan to eat at Disney Springs or a resort.
Speaking of Disney Springs, there are so many good restaurants that I don’t know where to begin. Just do some research. And get in the virtual queue for Gideon’s cookies. Worth the wait. Just get in the queue as soon as you get there and even if the wait is 3 hours you can just go shopping and eating and when you get the text that it is your turn you should be good.
As for EPCOT, don’t plan on any reservations. With Food and Wine, you can eat there for days and still have things you want to try! I look online at all the booths and their menus and plan on what is a must-have and go from there.
Of course, the amazing places are very expensive but it’s Disney.

I'll add votes to Yak and Yeti as well as Raglan Road (fish and chips or shepherds pie). I'll also throw in Sanaa in the Animal Kingdom Villas in Kidani Village. The Indian bread service appetizer was amazing.

Took the family in May and ate at Mama Melrose’s Ristorante Italiano. It was very good.

I do want to correct my comment about nothing being good in Magic Kingdom. Liberty Tree is very good, Thanksgiving dinner every single night. However, reservations would be needed and you have plans in MK already.
I also saw you mentioned wanting more quick service. Andy’s Lunch Box in Hollywood isn’t bad, it’s crowded and doesn’t have much space to sit (and is all outdoors) but it’s better than chicken nuggets and burgers.
Not sure if it has opened back up but there is a booth in Animal Kingdom that sells Mac and cheese and it’s delicious, especially the one with chili shrimp on top. Flame Tree is also very good but very crowded. I always plan to eat there during odd times so it isn’t so bad. Any place that does mobile order, take advantage!!

Been there, done that. By no means a favorite of mine.
Epcot: The Chinese restaurant in China, the Fish and chips in England, the Steakhouse in Canada.
Hollywood Studios: The fried chicken at the 50's Prime Time Café.

Also to the OP, the 50th anniversary celebration is currently going on. You are going to have a VERY hard time finding sit down dining reservations

Most of the food is terrible . You can find way better ethnic food in Orlando
