Help w Boiling peanuts

Hello all, I looked at the F&D cookbook but didn’t see a recipe for boiled peanuts.

I live in AZ now and have never made boiled peanuts before but really want to try and have some for the Auburn game. I have ordered 5 lbs in the shell and should have them in the next day or so.

My late father used to make them on occasion but he is gone and I am unsure of his process.

So, I figured since I am from LA I would like to try and make some however you guys recommend versus some generic pinterest style recipe. I’ve seen recipes w and without zatarains crab boil and also Pre soaking the shells etc.

Any tips? I am only expecting to eat thwm myself or possibly w one other guest. Is 5 lbs enough?

You don't want to rush it. Most of the people that boiled them in Georgia to sell on the side of the road would boil the day before and let them soak overnight and then heat them up the next day. Also, use more salt then you think you should.

Are you getting “green” peanuts shipped to you or just regular raw ones?

I do not care much for boiled peanuts. Most roadside stalls along rural Georgia roads are nothing more than over-salted, flavorless, mushy messes. I have hated boiled peanuts since the first time I tasted them. That was until our AP brought some to a potluck. Hers were seasoned to perfection and not overboiled. The one ingredient that set it apart was smoked pigtails. Now I'm sure any smoked product would do but, those goobers were some of the best I have ever had.

I've tried searching for "smoked pork tail peanuts" and the only consistent result is a recipe from Sean Brock's Heritage cookbook. I have not made his recipe but, there appears to be similarities to the ones mentioned above. Here's a copy of the recipe if you're feeling ambitious. It would be easy to scale up as the original is for #2.5.

For the crowd you’re trying to feed, use a crock pot. I do it fairly often. Fill it up completely with peanuts, add as much water as you can, about a cup of seafood boil, and another 1/4 cup of salt. Low for 24 hours, then off for another 12 to let them soak which is the most important part. They are ready when they don’t float anymore. Start them on Thursday night before you go to bed, turn them off on Friday night before you go to bed, and they’ll soak until game time. You’ll have to add water periodically.

Actually boiling them doesn’t require near the cook time as the crock pot does. If going this route, you might just boil for 2-3 hours on Friday night and soak them the same way until the game.

5 pounds is plenty for 2 people and you’ll have leftovers.

I cook 5 lbs in an 8 qt pressure cooker for 1 hr (after reaching set pressure) and let it cool to atm pressure (~1.5 Hr). The temperature in an instant pot is less than a normal pressure cooker (11 psig vs 15 psig) so the cooking temperature is 9 deg F cooler (241.6 vs 250 deg F). The cooking time will be a little longer than 1 hr (I would go 1.5 Hrs) and let it cool for 1,5 Hrs. Cover them in salted and other spiced water before cooking.

I don’t have green peanuts just the raw. The instructions on the bag say boil for three hours, so I assume that is the way to do it.

I think I may only be able to get the liquid crab/seafood boil so use a cup or so of that and also salt (1/4 cup)?

I figure will do on stovetop.

I don’t do it like the video, but I’m sure it’s great.

I buy green, soak overnight…. Keeping weight to hold them underwater, drain… boil/low bubble n crab boil/salt/cayenne for 6 hours.

Ratio for seasoning n video looks about right, plus some cayenne.

U can freeze leftovers and they do well n microwave when u want some from freezer

You need Green peanuts, because they are tender and make the best.
