Help me come up with something fun to cook tonight

Work load is looking light so I am hoping to sneak out early and head to the house. I will have about 4 hours of cooking time and have a pellet grill, ceramic grill, and black stone at my disposal. Only cooking for 2 people. Want to change it up and have some drinks while cooking.

Go to a grocery store that has a wide variety of items and buy some polenta or yellow corn grits. Google zeas corn grits recipe and follow that. Smother some pork chops and serve it over the corn grits like shrimp and grits (I compare it to Grillades).

A couple nice steaks with loaded baked potatoes and maybe some sauteed mushrooms with thin sliced onion and fresh garlic.
I'll take sour cream and mince green onion, parsley, add some black pepper and mix that together and if I have some fresh sweet basil, I'll mince and toss that in there too.
Fry off some fresh bacon for bacon bits, some good butter and whatever cheese you like and load that potato up.
Not much hands on cook time and a delicious meal.

poor man’s burnt ends with chuck roast I think you could do in 4 hrs. There’s a thread on this on the second page.
if you upped the temp to 325, 4 hrs would be more than enough, and it wouldn’t adversely affect the product.
Smoke for one hour, sauced and wrapped for 2hrs, then cubed into a foil pan for another hour. These are quite the treat.

When I've felt adventurous over the last couple of years, I spin a globe to come up with a country, then Google a few traditional dishes for that country and try to find the most authentic recipes online. I sometimes have to substitute an ingredient or two, but most have come out pretty good. Fun for the whole family.

That's a very cool idea. I love video games with the Yakuza series being one of my favorites. Food is a big part of the game so I've made a few dishes just based on what I saw in the game. Some came out well and some were a mess. But a lot of fun!

Restaurant here used to do a surf and turf poboy
They’d take a pretty good size NY strip and cook it medium and the slice it like a loaf of bread. Inside that they would stuff it with fried oysters. Drizzled hollandaise over it.
I was incredible and was featured on the food network show Best I Ever Ate.
