Try hoisin sauce instead of soy sauce. You can brush a little on before cooking it or even warm it up and pour a little on top after it is cooked.

Hoisin sauce is MONEY in my opinion...good suggestion!

If they have halibut, go for it. Best fish there is

Halibut is an overrated, overpriced fish IMO. It is basically tasteless.

Minus the green chiles and I'm in. Norwegian twin layered in olive oil.

I broil it and serve with a lemon butter caper sauce that I whip up , and I bet you'd like it.But, you could eat a shoe with that sauce on it....just a matter of taste, I'd say. I really like fresh halibut.

I love me some fresh tuna steaks sprayed with olive oil, lightly seasoned with Canadian chicken seasoning and grilled medium rare. Serve on a plate dotted with hoisin and sirachi (sp?) - the red sauce with the clear bottle with the rooster on the label and with a green cap.

Chilean sea bass is some really good stuff.

Hell, I like almost all fish but I'm not a fan of catfish unless it is baked or fried.

Patagonian Toothfish?

Mahi, Cobia, Snapper, Flounder, and Grouper would all be great choices.

Pompano and Snook are also very good if you can get your hands on it.

i wanted to try this recipe, but whole foods was out of halibut. my wife, knowing my predilection for the good stuff, got chilean sea bass as a sub.

she immediately declared this one of the top 5 best meals i've ever made. she does that pretty routinely though so don't get too excited.

gotta say though, for a throw together thursday night "i'm-tired-of-salmon-can-we-please-eat-another-kind-of-fish" dinner, it was m-f'ing good. i'll do it again.

alternatively, if you haven't seen my posts about fish tacos you should do a search. VERY good stuff.

[edit]
oh, and don't serve it with the suggested sides. serve it with good bread and crashed potatoes.
