a med steak has more and better flavor than a no texture, chewy, flavorless blue rare

Maybe for a ribeye or strip with lots of marbling, but for a flank, skirt, hanger, or filet you are wrong. For a strip, and ribeye, you need to cut it like a family style served steak at an angle.

You don't sound like you've ever tried a blue rare steak...at a place like La Boca 90% of your table would say my steak has more and better flavor than yours.

Where are the steakhouses I can patronize, where I can be assured they will not be turning out any steaks to customers beyond medium rare

Obviously 100% assurance doesn't exist in any facet of life.

If you have to have a steak, how about cooking one at home?

If you need to go out, plenty of quality steakhouses exist. Use the search function.

Sure I have. And it is simple thermal properties. A properly cooked and rested steak will release flavor and juices that a blue rare cant do because the temp is not high enough to change the fivers.

Why sear it at all? The answer is, it is the only flavor imparted. If you want 95% of your steak raw, why not just go 100%?

It's fringe benefits, not French benefits. Jethro Tull was not a member of the band. Steely Dan is not one person. James Dean is an actor. Jimmy makes sausage. It's not the leaning tower of Pizza.

Honestly, I'd rather 100% raw. I'm in heaven with steak tartare. I like tuna tataki and raw tuna as well. I think searing a steak helps meld the seasonings to the steak.

I eat mid rare steaks too, just not my favorite temp of most cuts.

Steak threads never fail. Hilarious how douchey some people get about it and how mad other people get about it. And it happens every time.

Nothing will ever come close to the microwave thread. Should be in the Smithsonian.

I hate sullivans with a passion. I have eaten there twice and wont be returning. Went in one night and had the same mistakes mentioned here and poor service. My wife and I were treated very poorly. So i called the next day and asked to speak with the manager. Leo Verde (taking a guess on the spelling) the manager at the time offered to have us back the next week and that this meal would be on him. So i agreed to that and he told us what time and day to come in. So when we arrived we had a good table and a better waiter, things were going well. We shortly received a bottle of wine that we didnt order but the waiter said Leo had selected this for us. Serveice was better and didnt have problems with our food this time but then the check came $150+ this included the wine at half price. I looked at the bill and told the waiter that we were on Leo's ticket tonight. So Leo came over and said well I sent you guys a bottle of wine so I dont see a problem (yea that I was half paying for)? I looked at him and replied that I will not be returning as long as you run this place. They took the wine off but still paid 100 plus for a comped meal. Screw sullivans and screw that douche Leo.

damn thats shitty.

it doesnt surprise me though, his head was probably clouded from all the sluts he is trying to frick that work there. dude is a tool

Unbelievable story.. that someone would send a bottle of wine to your table, without asking you anything in advance.. and then put it on the bill?? I would love for somebody to try and pull this bs on me.

Yeah frick anyone in here bashing a medium temperature. Medium is exactly what the name says. Medium. A perfect medium should be a good pink in the middle. You people act as if he is bashing outback because his nine dollar sirloin ordered medium was bad.

Bunch of r2r motherfrickers in here.

That manager at Sullivan's is a prick (Guido looking douche). He hangs out by the bar and is absolutely useless. Take your business elsewhere.
