Maybe for a ribeye or strip with lots of marbling, but for a flank, skirt, hanger, or filet you are wrong. For a strip, and ribeye, you need to cut it like a family style served steak at an angle.
You don't sound like you've ever tried a blue rare steak...at a place like La Boca 90% of your table would say my steak has more and better flavor than yours.

Obviously 100% assurance doesn't exist in any facet of life.
If you have to have a steak, how about cooking one at home?
If you need to go out, plenty of quality steakhouses exist. Use the search function.

Sure I have. And it is simple thermal properties. A properly cooked and rested steak will release flavor and juices that a blue rare cant do because the temp is not high enough to change the fivers.
Why sear it at all? The answer is, it is the only flavor imparted. If you want 95% of your steak raw, why not just go 100%?

Honestly, I'd rather 100% raw. I'm in heaven with steak tartare. I like tuna tataki and raw tuna as well. I think searing a steak helps meld the seasonings to the steak.
I eat mid rare steaks too, just not my favorite temp of most cuts.
