Have some pork butt, what should I do with it?

I probably have enough of a chunk to cut it in half. Trying to buy cheap meat b/c regular meat is skyrocketing right now. My options are:

1. Cuban/Mojo Roast
2. Carnitas
3. Smoked/pulled pork

Smoke it, make pulled pork then make some carnitas out of the pulled pork.

Combine all 3.

Marinade it like 1.
Cook it like 3.
Eat it like 2.

Did the Donald Link smothered pork roast back at the beginning of the corona lockdown; the leftovers will last a good portion of the week

What kind of grill or smoker do you have?

I'd take 1/4 and make Al Pastor Tacos, 1/4 and make Mojo Roast, and BBQ Half.

If you want simple then just BBQ the whole thing and whatever you don't eat freeze in portions to be used in other dishes.

Have you made the Cuban roast. You need bitter (Seville) oranges or a bitter orange marinade to make it properly.

i'm not running an authentic Cuban restaurant so 100% authenticity isn't the goal

It makes the flavor and it's not that difficult to get the marinade. It's probably in the international section of your local grocery store.

i'm REALLY looking into those Masterbuilt gravity series but i still rely on the Weber i got for $10 at a garage sale a few years ago for now

Cut into steaks, over direct heat, make a mop sauce, boom enjoy.
