I don’t live in LA so I take what I can get. My brother brings me Rabbideaux’s when he visits. And I load up on various stuff when I visit LA.

But a market near me just started carrying Bourques and I’m liking it.

I try to go to the local small shops. Tramonte's, Chris' Specialty Meats, Benoit's, Bergeron's, Iverstine if they have andouille.

As morbid said, now i want gumbo. But my wife won't eat gumbo when it's 95 outside.

IMHO, Cajun Prairie >>> River Parishes. My recs:

1) Rabideaux's smoked andouille (that's how we roll).
2) Teets
3) Rabideaux's smoked sausage

LA has an embarrassment of riches when it comes to specialty meats. You won't go wrong even with the LaPlace joints.

Add some smoked chicken thighs from Bergerons in Port Allen and some andouille from Jacobs and you'll win ..hands down!
