Grilled Portobello with Blue Cheese

Any ideas on dressing this up a bit?

It needs something...just can't decide what.

caramelized onions
figs
bacon
fresh chive or parsley garnish
balsamic or fig balsamic drizzle
rendered pancetta

i had a nice salad the other day with 50% field greens, 50% spinach, walnuts, avocado, grilled corn, grilled onions, grilled zuchinni, and grilledmushrooms. i think it had feta cheese, not blue cheese. it was served with a vinaigrette, but i just had a basil infused olive oil and some balsamic instead.

eta: had some dried cranberries as well i think.

I like that idea...that could really work...I was thinking of roasting some onions on it, but I think the caramelized flavor will work better.

yeah, the sugar will play with the blue cheese nicely. That's why i also like the fig or fig balsamic idea.

also, next time try softened goat cheese with herbs mixed in. damn good.

I like the goat idea as well...thought about feta, but figured blue cheese would be better...it was, but somehting was missing. Thanks.

a very nice flavor to roast the mushrooms in is a thick balsamic reduction. Reduce balsamic vinegar to a thick consistency and marinate the portobello caps in this for a few hours. Roast in the oven and coat a few times during roasting. Excellent flavor and not too strong.

A nice basting with olive oil, then the balsamic vinegar.Finish under the broiler with your cheese.Be sure and add some fresh cracked pepper before the cheese.

heres how i make portobellos. i take some veri veri teri and mix it with some bbq sauce, spices and herbs. i put some evoo on the bottom, some balsamic inside, then i fill the rest of the mushroom with the sauce. i also add some green onions. grill until soft, then i add some smoked gouda and cook until melted.
