Going to attempt a pastalaya with 20lbs of precooked carnitas

Yeah we made WAAAAAY too much pork butt for the carnitas the other night. I have a lot of pork left over. Lightly seasoned. Nothing outlandish. Mainly just salty pork.

Going to see what kind of pastalaya I can turn it into.

The hardest part is going to be browning off the pork for more gratin.

Should be an interesting attempt regardless.

Why do most pastalayas end up with pasta that’s gummy af? I can only speak from my own experience.

Overcooked pasta. When it just sits in its own starch, it gets gummy.

I think that is why I have never been a big fan of pastalaya and prefer good ole Cajun jambalaya.

Try using penne pasta, that’s pretty much my go for this reason.

Usually I'm a pork first kind of guy, but I keed the fat from the sausage.

Not gonna lie that giant glob of meat doesn’t look appetizing but I’d like to see the finished product
