I want to try some different cajun/creole spice blends in my Jambalaya, what do you guys use? I had to use Slap Yo Mama this past weekend b/c I was out West with only that or Tony’s as my options. I want to order a few recommended ones. LeBlanc’s, Konriko are two I may try - any recs would be greatly appreciated.

LeBlanc's is the gold standard for jambalaya IMHO. If I don't have that I mix up all the dry spices from the Jambalaya Calculator and use that in its place.

I always use my own, 2pts Kosher salt, 1pt black pepper, 1pt onion powder, 1pt garlic powder, 1pt paprika, 1/2pt cayenne. IMHO, very hard to beat…

LeBlanc’s one 8 oz can per five pounds of rice….perfect

Want to change it up? I know it sounds crazy but use 1/2 LeBlanc’s creole and 1/2 LeBlanc’s bar b que. Kim Leblanc himself taught me that one , turns out great

I usually mix 50/50 Tony's and Slap yo Mama hot. For just about everything.

The main difference between regular salt and kosher salt is the structure of the flakes. ... Kosher salt will have a different texture and flavor burst, but if you allow the salt to dissolve in the food, there really isn't any difference compared to regular table salt.

So no reason not to use it. I dont keep table salt around, so I was just wondering if you had any actual reason not to.

It's funny how your response is word for word the first thing that pops up on Google for the difference.

Iodized table salt is also much saltier per weight than kosher or sea salt.

I like it and use it, is it much better than the others out there????

I strictly use it for Jambalya, I also like his bar que rub, his guns and roses bar b que, and his New Mexican seasoning

Yes, I googled it and did type the first thing to show you that the answer is simple. Kosher salt is good on large cuts of meat or sprinkled on top of something you’re eating after it’s cooked. If you’re cooking a Jambalaya, you’re adding your seasoning before you add the rice. Your seasoning is dissolving in the water. Which is why I asked why he chose kosher salt.

I didn’t knock the poster for saying he used kosher salt. I asked why. I asked a question.

I was just wondering why you brought it up. He specified kosher salt because that's what he uses. He would have to cut the salt if he used iodized salt.
