Frying Oysters

I'm frying oysters this afternoon, does anyone have a favorite recipe for coating, or should I just use the tried and true dip in egg wash and dredge in AP flour and slap ya mama seasoning?

Also what's a good remounted or aioli to do wi them, always looking for new ideas and the FD board always delivers. Thanks!

Corn starch, egg wash, panko.

Serve with an Asian mustard sauce.

I like Italian style Panko after the dredge in the egg wash with some La hot sauce added.

Corn meal and lots of black pepper. I luke mine barely fried. Under 1 minute

No need for eggs, just shake in Louisiana fish fry, crunchy with lemon and some added Tony's. Fry for only a few minutes at most.

Cornmeal only. No eggs or batter of any kind. Sesaon the cornmeal any way you like, but watch the salt if you're oysters are salty.

Oysters have a lot of fluid in them so if you have a thick coating, it's likely to steam off resulting is a big old mess. Fry quickly and don't crowd the fryer.
