All seafood should be fried at 375 and taken out when it floats. since most of it is thin it cooks fast.

i do mustard, hot sauce, black pepper, milk, & eggs, then fry them with zatarain's seasoned fish fry

A really good cheat we have used while camping is to take a jar of pace picante sauce and dump it in a pot bring it to a simmer and add some catfish chunks cover for a few minutes give it one very gentile stir and eat over rice or what ever or straight up.

surprisingly delicous and way easier than making a creole sauce.

You can absolutely taste mustard on fish, when people use it as a binder. People that eat mustard, like mustard, or use mustard on fish - that say you cannot taste it - are clearly immune to the faint taste.

Rather than mustard, use Louisiana Hot Sauce (its a little thicker than Crystal and I dont eat Tabasco) and dip ur catfish in it before u dust w seasoned corn meal.... then fry.

I fully agree, I use no binder other than seasoned ice cold water right before breading into seasoned Cream meal (kind of hard to find but is between corn meal and corn flour) then straight into 370 ish grease until it floats and most importantly drained on a wire rack not paper towels

Not a fan of the mustard technique. This way is much better. It gives it some pop.

Where have you found it? I've been looking for it and found it in 25 lb bags on the Louisiana Fish Fry site, I think, some years ago, but I haven't looked at that since. Uglesich's used cream meal.

I have a buddy that gets it from a wholesaler (i think targil in Opelousas) gets it in 2 lb bags, I can get some for you if you want, makes the best cornbread too

La hot suace has gluten in it. crystal dont. Maybe das why la is thicker?? We do what we gotta do. I would neva sue straight msutart but a teaspoon or so in da egg wash is good .

decades ago when I worked in the kitchen at Drusilla, it is what they used and I have been a fan since, I still can not get the hushpuppies right though

Thanks. I may take you up on that. Meanwhile, I emailed Targil because it's not on their website. Looks like you can order from them. Site also says if something isn't listed, they may still be able to get it, so contact them, which is what I did.
