The mom n pops place here in town will put brown gravy with onion on your fries if you ask. When I get the hamburger steak from there I get fries covered in gravy. It is probably similar to what you are talking about.

Anything not frozen. I like dipping them in a mayo ketchup mixture.
If they have to be frozen I prefer crinkle or home style. I love waffle fries but from Chic Fil-A only.
And the previous poster who mentioned J Alexander's...those are legit!

Pic from the only place I've had gravy on my fries and it is awesome. Place called Murphy's in Bartlesville, OK....home of ConocoPhillips. It's an old diner that's just a dive.
The picture is actually of their "Hot hamburger". The burger is sitting open face under the fries and gravy.

chick fil-a waffle fries are usually soggy but if you get a fresh batch they are amazing.

Way back in 1972 wife and I had just gotten married at age 17 and that's what we survived on. Homemade fries and the old style plain Doritos and bean dip with a coca-cola to wash it down. My culinary skills are way better these days.

I like homemade best, followed closely by the upper level, cheap crinkle cut in the sack. Crispy and salty on the outside, medium mushy on the inside.

As a French-Canadian living in NOLA, I've always wanted to open a poutine joint down here. I, too, think it would be a major hit. However, the cheese curds make or break the poutine so I probably need to learn how to make good curds first
