Sometimes I put a little soy sauce in my seafood gumbo, just a coouple drops. Gives it a little flavor boost.

Thanks for the report. Was it chicken and sausage?

Put it in a beef veggie soup a couple weeks ago. Turned out great. Stirred in some miso paste too.

Careful about that.

In my experience, FS quickly goes from a anonymous, harmonious, umami-base to "who dropped the box of Morton's in this dish?".

And I say this as a big fan of FS. Best use as a secret weapon: spaghetti sauce.

I've done it. I've also done a pho-gumbo hybrid that was pretty roundly rejected on this board, so I say go for it. Fight the establishment. Fish sauce never hurt anything.

Just for shits, I threw three star anise into my turkey stock. I didn’t tell anotone and don’t think I could really tell in the finished gumbo.

my bro in law put some fish sauce in my gumbo yesterday and I gotta say, I didn't mind it one bit.

I do it every time I make gumbo. I do it for pretty much every savory type of stew or soup.

It definitely adds to the flavor.

Ditto. I also add it to my braises. I added some to the turkey stock I made yesterday, and I think it definitely brought out the flavor of the stock more.

fish sauce is a great and flavorful source of salt for a lot of different dishes. it doesn't surprise me at all that someone successfully used it in gumbo. go for it!

I have been meaning to do an Asian-fusion Gumbo with Miso Paste ever since watching Salt Fat Acid Heat on Netflix!

I’m thinking a seafood gumbo with ginger and miso paste added once the roux is done and I start sweating my mirepoix.

Go for it, man!

I would only add fish sauce to things I would also consider adding anchovies to. Which is a lot of different stews and soups. However gumbo is not one of those for me.

The guy at Kanno sushi in Metairie does this soft shell crab miso soup, that I’ve always thought of as sort of gumboesque
