Fish Fry Batter

I very rarely fry anything at the house. I have a fish fryer, burner, basket, and temp gauge. I've used it once.
Planning on going fishing this weekend and thought about keeping some and frying em.
I remember my dad's buddy Bob frying the best fish of all time. He fried fish with heads off and descaled. If I recall, it was a touch spicy with some pepper, onion, garlic and corn meal. I'll ask my mom if she can remember what was done.
Anyone have a good batter? I see where there are some commercial versions. I'm not above buying one off the shelf.

I find the commercial pre-make fish fry batters are pretty salt heavy so I make up my own.
I use half yellow and half white corn meal-----fine ground corn meal, not the coarse ground stuff. To that I'll add Slap Ya Mama, Garlic Powder, Black Pepper and Cayenne Pepper to taste.
Use whatever you like as a wash and fry at 350 degrees and don't crowd the pan to lower the oil temperature too much.
When done, I put them on a cooling rack to drain with paper towels under it to catch any grease dripping off.

First off, you have pretty much guaranteed you won’t come back with fish.
If you do, don’t use a wash. Keep the fish (or shrimp or oysters) in ice cold water. Straight from the water to the fry blend YOU LIKE and into the grease.
I’m guessing you are talking little freshwater fish if Bob was frying them whole.

I have a friend that fishes Lake Erie often. We went to his camp a few years ago and ate hudreds of smaller fish that were breaded various ways.
Some were breaded in finely crushed flamin hot cheetos. It was amusing and worth trying, but not something I want every day.

Oak Grove hot & spicy chicken fry. They make fish fry also but the chicken batter gets crispier.

That Oak Grove Chicken fry is so good. I mix it with some different premixes.
