Why does that first brisket look like the back of Ed Cooley's head?
Some of the bark stuck to the butcher paper.

I like my pellet grill, but i do love using old fashioned barell smoker with lump charcoal and hickory chunks

Damn son. Jack up the heat at the end to get the bark? I'm not a huge bark fan

Nope

A pellet can't touch charcoal/wood smoking.
I disagree. I think it actually tastes better.

Whenever I think I may want to get a pellet grill to use on the side, I see these threads and snap out of it. Yikes

What? No...Low and slow the whole time. The rub is what gives it the good bark

I was thinking something similar the other day. I have a Rec Tec at home. Bought a ZGrill for the camp. Purchased a Camp Chef for the boys at the plant. There are some things I like about all of them but I pretty much get the same results from all three of them. OP is right about that Rec Tec being built like a tank. I’ll give Rec Tec that.

You should have swapped this up, imho

What do you think the pellets are made out of?
Listen Chi, I'm not hating on pellets. If memory serves me correctly, you own a GMG. So do I. Love using it, very easy, minimal work, set it and forget it. But when comparing flavors of food cooked on a pellet to being cooked on an offset (that uses charcoal and wood splits) the flavor, IMO, is just better.
I understand the argument you're trying to make. And again, not hating.

Camp Chef for the camp. I hear what you are saying. That Camp Chef I bought is huge. That Rec Tec is a 700 model and the ZGrill is I believe their 700 model. That big Camp Chef cost too much to leave up at the hunting camp for fear of being stolen. We’ve never had any issues with theft but I don’t want to risk it. I would rather replace a $450 grill vs the $1,500 or so that was spent on the Camp Chef. I don’t recall what model I bought on that Camp Chef but it’s a good bit longer than my Rec Tec 700.
