That looks great. Ignore the folks griping about your "convection oven" and choice of marinade and flavors. I bought a sirloin last week and made tacos with it for three nights.

Sirloin is completely underrated and a great vehicle for so many applications.

Yeah I’m going to pull it earlier next time so I can cook it in the pan longer. I had the skillet on my grill, so it may not have gotten hot enough, too.

I reverse sear all the time, usually on my charcoal grill. I like my steaks MedRare, so I pull at 117. Then I let rest for 10-15 min in a plate with foil on top. Many people use cast iron, but I finish mine in Stainless steel. Light spritz of avocado oil in the pan and give it a hard sear on your best looking side. Flip and throw in a few knobs of butter and baste with a spoon. Sometimes I throw herbs in the pan.

Here is the prime ribeye I did on Christmas night with some BBQ shrimp. Came out excellent.

When lazy, I just do the whole thing in the AF. 400 @ 5 mins and flip another 5 mins. Rub a little oil before seasoning.

I assume he does and it's possibly the reason he figured it would be the same outcome in either.

This. Way I learned it was to pat dry the steak as much as possible so there is no moisture whatsoever on it. Let it get to room temp then coat with coarse salt only before putting in the oven. When you get the internal temp you want, pull and let rest. Then sear however you like. I use a black iron skillet on the grill with a pat of butter. Then serve immediately.

What would have made it different? I'm still struggling with the fact that so many have a hard time with this.

It's definitely not how I thought this post would turn out, but it's been fairly entertaining nonetheless.

Not using the oven. I grill, stove top, or use the countertop convection oven as much as possible when it's warm

I usually cook mine on the Traeger and reverse sear on my propane grill or weber kettle. works well.
