FBD: Smoking Speedway Sunday

FBD is one of my absolute favorite non-barrel ages stouts while ribs and my attempt at “pork candy” sit steady at 225.


Bought 3 racks of pork spare ribs yesterday. Had to cut the breast bone and excess meat off to convert the rack to St Louis. Normally I save those parts to make a gravy later. However, this time, coated some of those pieces with lots of brown sugar, then seasoning. Put them in the smoker about 2 hours ago, just put the ribs on before taking the picture.

Hoping those excess pieces come out by 6pm as sweet, spicy, jerky-like pieces of pork goodness.

This was the final tally from last night. Thanks to everyone who came and shared. My patio smells like roasty chocolate and bourbon.

I discovered that it powers up if I use the remote. The On/Off button on the unit is evidently the problem.

We had a lot of great ones. I think my favorites were morning wood, Westbrook 7th, fou, Casey cherry, and the one with the peach on it. It was from some brewery in South Carolina I’ve never heard of. Excellent sour.

FBD on this dreary Smoker Sunday

Stuffed a pork loin with creme cheese and jalapeno, then wrapped it in bacon. Almost done.

I am doing a prime rib roast using your technique. Low and slow to 125 at 225 in the smoker, then a quick sear on the grill.

2BD is a DDH BO Envie.
