The cute manager saw me checking out the smoker operation and gave us a tour of the smokehouse. They have four of these massive smokers, all custom built by Lewis.
They sell about 120 five pound briskets on weekend days at $29 a pound. So about $18k a day just in brisket rev. They run them for 18 hours starting low and then jacking it up at the end. They use no technology to maintain temps. Just dudes who know what they’re doing. Very cool.
