Yeah, I'd have never guessed duck neck but I like your style with making the smoked meats into a stock and not tossing anything but feathers, feet and head.

t00f calls them meat candy. I've had mixed results with them. I usually get the individual prime short ribs from Costco and smoke them at 225 until a temp between 200 and 205. I love them, but I've had a few misses.

I smoke between 275 and 300, but I aim for 200-205. I pull when a toothpick or probe goes in like it's softened butter.
