I'm planning a crawfish fettuccine this week, but that's a little extra effort.

A quick lasagna with canned sauce, no boil noodles, and the meat of your choice is an easy one.

Pork chop and rice casserole is good too if you can take the sodium.

Boiled fettuccine noodles
Panko/seasoned bread crumbs for topping

Saute onions, bell pepper, and celery in butter until soft. Add crawfish and any fat that comes with them, garlic, and parsley. Cook 10-15 minutes. Add cream, cheeses, and flour. Stir and simmer about 30 minutes.

Add boiled noodles to crawfish mixture, pour in casserole dish, and top with bread crumbs. Bake at 350F until center is hot. About 30 minutes.

Lasagna made with "loose ground meat" and small balls of my homemade Italian Sausage browned off before going in the sauce.

Second favorite would be my King Ranch Chicken Casserole as is it inexpensive to make and tastes delicious. You could easily feed 8 people on it for under $20.

It's been awhile, but I've got a recipe for a tasty tuna and casserole with capers and a lemon, cheese, and breadcrumb topping (think of stuffed artichokes).

We don't have kids, so we only make it when we're having guests who like that kind of thing.

Coater, Chicken Poppyseed is the signature casserole of Marion, Alabama Covered Dish Suppers and Dinner on the Ground at all of the local churches there.

A big favorite at our house too. Hard to beat Poppyseed Chicken and Caramel Cake for dessert.

Our DOTG dish was usually Rice, Broccoli, Rotel and Velveeta casserole. See Fish's photo above and think of that good looking stuff, except with Rotel added.

Ms. Marc's DOTG fried chicken should have a statue honoring it on the Courthouse Square. IT was that good.

The wife made her chicken and dumplings once and I thought there was going to be a fight over it.

Ate this once a month growing up in the 70s and 80s. Still find it delicious.


Tuna Casserole (po folks version)

2 cans tuna
Kraft Mac and cheese
1 can Cream of Mushroom
1 can green peas
1 bag potato chips

Cook Mac and cheese per directions. Mixed with drained tuna, drained green peas, and cream of mushroom soup. Spread in casserole dish and cover with crushed potato chips (be generous). Bake at 35O for 20 minutes or so, Watch chips so they don't burn.

Preheat Oven to 375
In a greased oven safe dish, I use about a 7x11 Pyrex type dish

-1 pack of Mickey Brown Hot Tamales, later them on the btm and kinda smash them into 1 even layer
-24 ounce can of chilli, I've used Hormel before but if I have chilli in the freezer I'll use that.
-12 oz Colby Jack cheese, on top of the chilli

Optional, sliced jalapenos, drained black beans

Bake at 350 for 20 minutes, or until the cheese is bubbly and staring to brown. Serve with tortilla chips or fritos, I add a lil sour cream to mine.

Mexican lasagna type deal. Layers of flour tortilla and just about any meat(leftover brisket has been our favorite) mixed with a block of cream cheese, then toped with Mexican blend. I use enchilada sauce on the bottom of the dish and throughout the layers. On the last few, I made a mixture of Mexican crema and the enchilada sauce for the final pour over.
