Pork butt is 4 hours in, internal is at 133. We're moving along.

Debating saucing or not. It's plenty juicy enough on it's own.

Was able to get everything done a little after noon. Butt was only able to rest for 30 minutes, but it was fine. Ribs and chicken were also phenomenal.

There’s something about that rush you get towards the end when it all comes together and everyone starts making a plate. Keeps me cooking!

Is that what you call it? I call it the panic when you have all the vents wide open but the grill temp is still dropping line a rock and the meat still has 10 degrees to go.

If your'e cooking on the kettle you should get the slow and sear. Easy to manage the fire and easy to add coals when you need more heat.
