This one came early. I coupled it with a true 1HP commercial grinder that’ll get here in the next few days.

I find the pastrami to be the most sensual of all the salted, cured meats.

Just a little update,
Buck I shot over thanksgiving went into my beer fridge for what was going to be 17 day dry age run. I took all the drawers and shelves out and sterilized it. I used some plant hooks and 2X4’s to make a rack, and drilled holes in the bone for sections of coat hanger to run through. I looped it a couple of times and put a towel I stole from the sauna at the bottom.
I kept the fridge at the coldest setting, and ran a small fan inside the fridge to keep air circulating around the meat.
The difference is pretty noticeable. Here’s day one vs. day 11. There’s a look at it on the block about to be deboned, and a shot of the roast.
Grinder is in Onatrio this morning. I’m guessing by Wednesday, 1HP of torque and horses is gonna be here to make this meat into mush.

Dat stuffer is a game changer baw. Once you use that you'll never go back to using the grinder to stuff!

Orealy? I started processing my deer last year and have found doing link sausage on the electric grinder fairly easy. Is that contraption really a game changer?

got a new deep fryer. was on sale at HEB for $20 last week. got knives and new cutting boards last year, so need something better. maybe a wine fridge?

Lowes had wine fridges on sale, I just twist the cap off the bottle, pour a glass in a plastic Mardi Gras Cup and drop an ice cube in mine, I'm not fancy.

I'm getting an InstantPot. Not sure how I feel about it. Didn't ask for it, but saw that the wife had ordered one on Amazon. Intrigued at being able to make soup fairly quickly though.

I have one. It makes amazing food, but the time factor makes me not use it very often. If worked from home, I'd use it a LOT more. Most things take at least an hour, and with 2 kids, wife and I both working, etc. it's just not conducive to our lifestyle.

Instant pot is badass. Can sear in it then pressure cook. I used mine last night.
