Doing a Beef Wellington for super bowl. questions

So I started my mushroom Duxelles tonight. Went to farmers market and got a very nice mix from Maggie’s Mushrooms.


Cioppino

Shiitake

Oyster mix

Chestnut

And some king trumpets.

Sweating garlic, green onions, shallots, thyme down in the pan with butter, ran all the shrooms through a food processor, cooking it down for about an hour until the water is cooked out.



Have a 4.8 lb tenderloin from Costco. Nice piece of meat, very flavorful. Coated with salt and pepper and I’ve been massaging it every day for 3 days now.

Do I need to trim it down? Should I sear it and try to get it all wrapped tonight and sit, or will that affect the puff pastry crust?

I've never made one, but I have watched Gordon Ramsey make his multiple times. I would think you could do everything except the puff pastry tonight. Just my opinion.

Costco packaging normally will say if it's trimmed or not. If its not trimmed you will notice silver skin that needs to be removed with a sharp thin knife. There will also be a seam that you can sorta open with your hands. Use that seam as a guide to peel away the less desirable part. Grind it for something else. Check Youtube for videos on trimming.

Buddy of mine has been wanting me to cook a Beef Wellington. I told him good meat is high as giraffe pussy right now but if he bought the tenderloin, I’d make it.

So, he got a prime tenderloin. Why not? I’ve got the prosciutto, the puff pastry crust, then I got the mushrooms and I’m making the duxelles. Joe Burrow is in the super bowl. Why not go all out?

Interesting. There’s so many different recipes out there. When I made mine, it was liver pâté with the mushrooms.

I've never understood Beef Wellington.

Why are you wrapping expensive arse steak in bread and mushrooms. Makes no sense to me.

is exactly how I've always felt. I think if it was named something less "royalty" sounding, it wouldn't even be a thing. Like beef bread or dare I say...hot pocket.

I made Gordon's recipe for Christmas 2 years ago. Really wasn't that hard. Did you use chestnuts?

I’m not a huge fan of the dish. Made it once for kicks, and found it a bit overly rich for my tastes. But, we’re talking beef tenderloin, which is not really the most flavorful cut of meat.

Yep .. at least for now, this is still a free country. Cook what you want , when you want. I never would have thought anything is off the menu.

For all that I am now going to make French onion soup for the Super Bowl

I don’t personally love the dish. My favorite part of a steak is the seared crust, which you don’t really get with Wellington. Same reason I’m not into slices of prime rib.

That said, it’s fun to challenge yourself in the kitchen and it’s definitely a good bit of work.

I realize it’s not your typical super bowl fare, but is there any particular reason pizza and wings and chips and dip are “appropriate” instead of something fancier? I mean, this is Burrow and chase and the Bengals in the super bowl. It’s not every year. So I’m going with a big charcuterie board and…well maybe instead of Beef Wellington its a 3rd and Long Filet Wrap. Less pretentious.

And with something like beef…Filet Wrap it’s something that’s better with a group, it’s a celebration. Better to share with friends and enjoy something fancy. Plus it’s a treat to get a chance to make it. It’s not every day someone else foots most of the bill for a treat.

So no, it’s not typical finger food, or hamburgers and hot dogs…but it’s not a typical
Super bowl either,
