Speckled Sea Trout are good, especially under 16". If you catch anything bigger than 16" when you fillet it make sure you leave a thin layer of meat between the skin and fillet. Otherwise it may have a "muddy" taste.
Bass are really good as well. Especially the little 13" knotheads we catch in the marsh. They hard to beat. Fried, broiled or even blackened.

Salmon and Tuna are hot garbage compared to fresh drum.
Speckled trout and white trout are not trout at all, they are drum and they are damn tasty just like slot reds and black drum that still have their stripes.
Bass are sunfish and can be tasty in good water like the Biloxi Marsh and other marsh systems around south LA. They are hit or miss from ponds and lakes, just depends on the water and what they are eating. Most sunfish aren't as dependent on water for their tastes, no idea how that works.

Learn something new everyday. Speckled trout are delicious any way they are prepared, the handful of times I've been fishing that's what we were after. I've only had bass fried, it was fine too.

A friend brings us a lot of bass filets and they've always been excellent in flavor. I don't know the specific type, but we fry they or pan saute.

I didn't think I would like pickled herring, but when in Copenhagen...It's really not bad at all. Kind of sweet and creamy. Halibut is wonderful.
Not sure I have ever had any bass that I thought was anything special. Speckled trout and river trout can both be good.

I'll agree with that GENERAL statement, but at the same time I'd but sac-a-lait up against any saltwater fish. Absolutely delicious.
