quote:

In a city known for sweets, there is little that makes local mouths water more than the towering, historic doberge cake.

“It has to be at least six layers,” insists Charlotte McGehee, co-owner of Bakery Bar and Debbie on the Levee, two bakeries in New Orleans, Louisiana, that specialize in doberge (DOH-bash) cake. “In my opinion, fewer than six is just a regular ol’ layer cake. You miss out on that feeling of your fork working through each alternating texture, and the nervousness you get because you don’t want that beautiful tower of cake to topple before you make it to the bottom.”

I've never had a Doberge Cake. And I'm from New Orleans.

I don't like cake, but this one is legit. This and flourless chocolate cake. Never dry.

Use to do a half lemon half chocolate every year from Baum's. I use to look forward to that every birthday. Are they even open now?

Love doberge cakes.

Tried one from the place in the article and was not impressed. Ambrosia’s is light years better.

my favorite cake is doberge.

ambrosia's strawberry cake is a very very strong contender to that title though.

The famous place for dobege cake when I was a kid was Beulah Ledner's. I believe it was where Maurice's French Bakrey is now.

We went there all of the time to get the half and half. I used to love the chocolate and hate the lemon.

Me, too. The half and half is perfect. Sadly, Baums did close. I get mine at Oak Point now. Not the same, but still very good. They also do a strawberry version that is tasty.

Baum's on Florida in Baton Rouge closed in the last couple of years.

It is legit. Not at all like Ambrosias fresh strawberry cake with whipped icing, but truly a doberge—intense strawberry filling (similar to the lemon) and the typical thin cake layers.

I was drawn to it because the outside is a really pretty pink…my daughter’s favorite color.

Chocolate doberge from Gambino's is the best dessert I've ever had.

We had a lot of Baum's doberge cakes in my lifetime. Don't google for news stories. You won't like what you see.

Interesting read, thanks. Before reading that, I would have bet you a dollar it was related to the French dacquoise.

I know exactly what you mean. That is one of those things I have chosen to selectively dismiss. Eesh.
