Do they sell graded crawfish in Louisiana?

Whenever I see people talk about crawfish in Louisiana they just talk about the price. In Texas I’ve noticed that they they sell different sizes for different prices. I saw one place selling Field Run, Preferred, Ungraded Jumbo, and Graded Jumbo. Is grading Crawfish something that is only for the out of state market?

Yes, live crawfish are generally sold by size. For example, a sack of large crawfish is more than a sack of medium sized crawfish.

I've seen "select" or something like that which is the biggest of the big crawfish. But I don't know how crawfish can be jumbo graded and upgraded. The only "grade" I've ever heard of is based only on size.

Maybe field run is just a mixture of sizes because they don't sort them.

Plenty of places in Texas only sell field run. It’s the same everywhere. Some places will get sorted and some just sell the sacks as they are with different pound amounts per sack.

No, you can get graded all over the place. The problem lies on where you’re trying to buy the live crawfish. If you’re buying them near the source and or a wholesaler you’re more than likely to get you’re hands on the graded crawfish. For instance, buying them somewhere near or in Acadia parish where damn near every rice field is crawfished. There are tons of wholesalers and you can buy directly from the farmer, although that usually isn’t graded very well.

If you’re buying them from a place here in Baton Rouge that also boils them. You aren’t getting their “selects” or graded crawfish. They are boiling those and selling them. They will sell you their ungraded or lesser quality sacks.

Also, if you’re buying straight from a farmer. typically the crawfish are going to need to be cleaned a good bit more. Unless they are a real big operation and have a sorting facility.

Everybody is selling pretty much a field run right now. They may tell you otherwise, but its still a little early to be selling graded.

I dont need all those options..... a nice medium size suits me just fine. Too much waste with big crawfish especially if they have big claws. I do try to buy a sack of larger crawfish at least once a year to clean the heads for a bisque.

Late April/May you will start to see graded bugs.

The weight of the sack is a good indicator. Bigger crawfish usually have less overall sack weight.

Graded crawfish is a scam that they use in Texas to charge more for crawfish, and the stupid locals eat it up.

There's about a half dozen places in and around NOLA I buy live sacks from, depending on where I am boiling. Not a one grades their crawfish. They sell their crawfish for a price. They will be at their largest in April. Late April to June you get a lot of Belle River. Lot of pond before that.

I also believe crawfish can get too big. They don't cook as well and they don't soak as well.
