I've seen Besh at La Provence a few times - - like random Sunday afternoons. My guess is that he lives on the northshore and that's a fairly laid back kitchen.

The chef like that designs the menu and dictate the recipes.

Nope. Especially Chefs with restaurants in different cities. Emeril has been mentioned, and I'm counting 13 restaurants for him. I'm certain he's not flying between New Orleans, Vegas and Orlando just to cook food. Then you have Chefs like Wolfgang Puck, Gordon Ramsay, etc. with restaurants spanning different continents.

Emeril does go quite a bit.
Since he doesn't have as many commitments with TV and stuff, he is more involved in his restaurants and is opening a new one in South Walton, Florida.

Most of these folks, while still chefs (a nebulous term in its own right) have all evolved into restaurateurs, which isnt a bad thing at all.

So would a chef like that ever do an announced tour of his restaurants where he's actually cooking at a certain place on a certain set of dates? Like Lagasse will cook at Emeril's from May 15-17, then his place in Las Vegas from June 26-28th, etc?

I know Emeril cooks in his restaurants at the chef's table periodically. I'm sure it's for people that request him specifically and probably pay for it as well.

They have executive chefs. In all jobs you want to advance. They advanced past the executive chef level and are now owners and operators. No need to put on an apron anymore.
