Did I buy the wrong crawfish burner?

Had an old single jet burner that finally crapped out. Wife bought me this


The burner does bring the liquid to a boil but it’s a bit different. While extremely quiet(which I like) the flames end up going up the sides causing bad burn marks on the side and bottom of the pot. Each time I would have to scrub the pot to remove the burn and soot. The pressure gauge is always set to low so I’m not sure what else I can do to stop the burn. Will I burn through my pot if I continues using this burner?

Have you tried adjusting the damper to see if you can dial it in?

For boiling, yeah you did. That's a low pressure Cadillac burner - used for cooking, not boiling. And you're getting soot because your airflow vent isn't set right.



Light the fire and turn that plate until your flames don't have any yellow in them. And go buy a high pressure burner to boil.

Have the similar style burner and do not have the problem with the flame up the sides. Make sure you have the air ports open where the gas line connects to the burner (black face plate). Then crank the regulator 100% open after lighting.

Yes, you use jet burners for boiling crawfish.

Can you make that one work? Sure, but the jet burners are the proper burner.

Definitely get a high pressure regulator 30 psi and higher to make it burn higher. Usually the red ones. And adjust the airflow to help the flame. It’s a great burner for jambalaya and a poor burner for crawfish.

It’s a banjo burner. Cadillac burners are different, yet similar.

They are pretty much the same. The Cadillac is fancier. It has the dial button where you can adjust it. It has an inner ring of “jets” and an outer ring and you can adjust the heat and use one ring or both rings. They are built to be the burner and the stand (pot sits on top) although I’ve seen guys build stands for them.

Banjo, what you see is what you get. All jets are lit at once. And you add it to a stand.

In my experience, Cadillacs are meant for a flat bottomed pot sitting on top of the burner, preferably in the 5 gallon size range. jambalaya, fish fry, etc. I’ve always seen guys cook with them on tabletops.

I have a Cadillac and used it a handful of times with a flat bottomed pot and never had the desire to use it again. I have all the set ups for banjo burners on stands with round bottom pots and never had the need for the flat bottom. Every 5 years or more, I may break it out to heat up beans or something like that while I cook in another pot.

Cadillacs are nice, they just aren’t ideal for my style of cooking.

This is a banjo burner but just a lot bigger than others? Looks much bigger than the ones posted so far.

That’s the banjo burner. Same as posted by the OP. The one posted above with the red circle is a small burner, suitable for frying fish or frying turkeys in small pots. Probably pots 5 gallons and smaller.

Thread drift...approved places to buy jet burner replacement parts online? Amazon has plenty but I'd rather not plastic chinese crap. Looking for hose & regulator.

My burner was a hand-me-down and is probably 40+ yrs old w/original rubber hose. Always concerned the next time I go to use it the hose will fail and a hungry crowd will descend on me.

Always seem to burn the bottom of the pot and can never get to a low simmer.

Your best bet is the small burner like the one with the red circle. It’s basically like a gas stove burner at your house.

Cadillac would be nice because you can go from big (outer ring and inner ring) to small (inner ring).

Metal pots are going to burn easy if the bottom isn’t very thick. If you have a nice thick bottom (how I like my women), it will work. How close the pot is to the burner will make a big difference as well.

The Cadillac and the small burner are ideal for flat bottomed pots. The small burner can also work with round pots if you have the right stand.

I have a 5 gallon cast iron round bottom and use nothing but a regular banjo. Same for all my larger round bottom pots.

I have a 5 gallon cast iron flat bottom that I use the banjo with, but as stated, I don’t use it often at all.

I would prefer the larger banjo on that sized cast iron pot, but the small would work. You would need the large for any pot bigger than a 5 gallon.

Not to be argumentative, but what OP posted appears to be different. It appears to be a CajunClassic Heavy Pot Burner. While a banjo burner it’s capable of 200.00 BTU (twice a single jet burner output). Seems like it would be a perfectly fine boiler.

If that’s the case, his problem is baffle adjustment and not getting a completely blue flame.
