Deviled egg, smoked salmon sandwich

I made a dozen deviled eggs for the game the other day and had a good bit of filling left so I refrigerated for later.

Later.

Two pieces of Whole Foods country bread toasted, small amount of Blue Plate on each slice, spread deviled egg mixture on it, topped with sliced smoked salmon, capers, three slices of cooked applewood bacon, sliced heirloom tomato, butter lettuce, sliced thin red onion, black pepper. No need for salt, the salmon and capers provide enough but the mayo balances it.

Let's say it was worth saving the deviled egg mixture.

Sounds terrific, but Hellmann's mayo is superior to Blue Plate and I'm willing to fight over it.

Well it's got a lot of flavors happening already. Plus I just like that little country loaf they do. It's a keeper though. And I have a couple nice fresh salmon filets I believe I'm going to smoke myself. This was a small already smoked I bought at Whole Foods. Good stuff.

Well homemade is better than any of them and better for you but I had just enough Blue Plate left for the sandwich and it's done. I like to make my own.

Sounds great, sounds kind of like a combo of several recipes in your app thread this weekend, but my question is what is your recipe for deviled eggs, I never seem to have any left over filling,may be doing some for Christmas and mine need some help

Well that's kind of where it came from. I do different Deviled eggs. My basic is egg yolk, mayo, yellow mustard, salt pepper, white vinegar, grated onion. All to taste and I like mine a bit tart. I can't stand a sweet Deviled egg.

But Saturday I used egg yolk, bit of sour cream, bit of cream cheese, bit of mayo, salt, pepper, lemon juice (because I'm trying to use what I can from the 100 Meyer lemons I picked) few drops white vinegar. This is similar to Barefoot Contessa but she chopped smoked salmon which I didn't have. So that's
what got me thinking. I did have salmon roe and topped them with it and chopped chives.

And I ate that sandwich like I was going to the lectric chair.

Sounds very similar to the smoked salmon sandwich that Maxwell's Market serves. Smoked salmon, cream cheese, capers, red onion, and boiled egg on marbled rye bread. I could eat that for lunch everyday for the next year.

I was trying to bastardize the quote from Harlem Nights when Della Reese complains to Redd Fox that he put the orange juice back with only a swallow. It was a reach and I didn't even get to work in the punch line.
