Honest Abe's Donuts in Greenwood, MS has some damn good tamales. It has been a couple years since I have been by there but they have always been solid.

Okay... Stopped at the Tamale Place on my way to Monroe this past Saturday, and got the tamale supreme. It was delicious and I'd for sure have it again. Somewhat hard to know about the actual tamale because it was so covered up with all the "goodness", and since this was in middle of a road trip and I was heading away from home and not to the house, I couldn't get a few dozen to bring home and just savor.

Next opportunity to do that, I certainly will.

Only thing of note, and I understand this is just a quick drive up and carry off tamale stand, but just having a picnic table under the awning would be extremely helpful as I had my elderly father with me and eating in the car is more of an ordeal for him. We ended up going to the welcome center on the river, which was okay, just a bit of a hassle.

For sure.

Yeah, the tamale place is takeaway only. Solly’s has a couple of tables inside.

I just picked up 15 dozen from a deer i brought there, also got some burritos made. Any suggestions on the best way to prepare them? I started making a batch today. The meat is done and will finish tomorrow since it’s supposed to rain all day. I used the meat recipe that Got blaze posted but will do masa and wrap in corn husks.
Hoping for the best.

i just microwave the tamales for one minute once they are defrosted. they are best with cheese on them. the burritos i air fry for 6-8 mins after defrosted or you can bake them in an oven until golden brown

The only true Tamales in the US is made by Delia's tamales in McAllen, Tx. Once you have a Delia's tamale you will laugh at those gringo tamales. They ship all over the US everyday. They have a store in San Antonio and one planned in Houston...even the Mexican's in da valley buy from Delia's instead to making their own...they're that good!

We made tamales Sunday and they came out better than I expected. I used your meat recipe but added the cayenne and it was perfect. We made them using masa . I was going to them exactly like you did with the cornmeal but couldn’t get the meat to stay together even after 24 hours in the fridge so we had to switch gears. I didn’t want to get out the sausage stuffed or just 3 pounds of meat .
I cooked half the batch in the crock pot with the liquid and the other half in a big pot with a steamer basket just to see the difference. The ones in the liquid had a better flavor and the pretty reddish color.
Also, I used corn husks which vary greatly in size . I will use papers next time to help with consistency.
In total we ended up with 54 tamales. We had a few for dinner and froze the rest. Overall I was pleased. We will make another batch using deer/pork/cornmeal and will buy a small jerky gun as well.
I just put them all in the big pot when done.

LSUballs I can tell that you've never had no Mescian tamales from Delia's ....you kept eating those Gringo redneck tamales.. tamales originated from latino countries not the Delta!
