But if it's not cubed it's not good. No beans or tomatoes either. No chili powder either. Just ground chilis.

You sound like a picky eater. You must be a teenage girl. You probably eat a lot of french fries and chicken tenders.

I am and I do. I also eat real authentic cubed beef chili. Not some fake Bert's chili. I eat Powerman's chili.

Chili may have started as a certain thing, but it has evolved.

People that say its not chili, if it has beans in it, are idiots. Its still chili. It may not be your kind of chili, but who gives a frick?

I like every kind of chili. With beans or without. With buffalo, or coyote. It Doesnt matter.

I appreciate your perspective here. Chili shouldn't have rules!!!!!

Wait just a minute, so chili should have rules? I are confused. which side of the fence are you sitting on?

This is a true Texas Red Chili

I do mine a little different but you're definitely doing way better than the rest of these ground beef clowns.

I usually try to put 2 different types of meat. Half cubed beef and half cubed pork.

Then about 25-30 chili peppers, 1 large onion, 6 cloves of garlic. I definitely add the shiner bock as well.

I leave the seeds in about 4 jalapenos and a couple of other peppers to give it some spice.

I have had quite a few cubed beef chilis, and I like ground beef and black beans and tomatoes more.

ETA: I'm sure yours is good though. Don't get discouraged.

Looks good. Chili is like gumbo. Make it the way you like it. I prefer ground meats and no beans. I eat around the beans when someone makes it that way.

Not a stupid fricking chili made out of cubed meat.

That's the way chili is traditionally made though

Cling to your shitty ground beef chili if you must

Do you dry your beef and chilis into hili bricks to be traditional? Have to do that so you can boil it out on the trail, right?

I picture Pman sporting a rainbow sweater, wolfing down a bowl of chili his mother paid for, cooked and served, at her table, where he lives...

what is your chili recipe?

I don't have a recipe per say but this is what I do

Render some bacon fat in a pot and remove bacon
Brown a mix of cubed pork and cubed beef and set aside. Deglaze pot with shiner bock as I go.

Dice one large onion and an assortment of about 25 peppers leaving the seeds in 4 jalapenos

Add more bacon fat to the pot, add whole cumin seeds, diced peppers, onions, and about 4 minced cloves of garlic and cook until you start getting a little brown.

Add browned meat back to the pot and 1 bottle of shiner bock

Slow cook until tender

Ground beef is ok in a chili but I think it should be IN ADDITION to the cubed beef.

Things that shouldn't go in a chili IMO are: tomatoes, beans, and chili powder. It's a fricking chili so put chilis in it. You don't need to add chili powder.

The greatest debate in Texas cooking must be about Chili con Carne. When was it first made? By whom and how?

I've been studying the history of Chili con Carne (Chili) for quite some time and the more I read, the more confused I get. I have managed to find at least a few "agreed" facts:

Chili comes from Texas, not Mexico
Chili was a popular Cowboy food already in the early 19th century
first Chili recipes had only meat, chile pepper, cumin, oregano and garlic
Texas Chili never has beans, but modern versions often have tomatoes

Found this on another website

So traditionally it doesn't have beans

We are in agreement here.

Every winning chili recipe from Terlingua has enough chili powder to dam the Mississippi.

Looks like I'm making chili tonight.

They traditionally dried the beef and chilis into bricks so they could take it and boil it easier later, start doing that too and be super duper traditionalist.

Will be making this weekend. I love you chili recipe. So much that I just omit the masa flour and call it Zombie's Chili. Good stuff.
