Honest question, Does beer really age in the bottle?

It's been my experience that there's a point of diminishing returns on beer aging. Usually about the 6mo mark.

Not all styles age well. Storage method could have an impact as well.

$23 for a four pack (yes, I read the 16 oz part) of an 8% DIPA.

$40 for a one year old bottle of Maple Shade.

But hell, guess the joke’s on me. Fanboys will fill their Uhaul trailers, and Parish will make bank.

I’m more than satisfied with $11 per 4-pack Ghost. I don’t see the personal ROI in paying double just to get an extra 16 oz and have it dry hopped.

Where the hell have you seen $11 ghost? I would buy that by the case

Yes. All beer ages. The question is do they age well. It's pretty well agreed on that higher alcohol beers and sours tend to age the best. IPA's do not age well.

I opened a 2012 Pumpkinator over the weekend. It was a pretty good beer. At 10% ABV, it had a nice smooth taste. Little alcohol warmth but the spices in the beer seemed to be enhanced, which i didn't care for. It's been aging in my beer fridge outside. Cooler temperature slows the aging process.

Now mixed fermentation sours are better aged. Depending on how it's packaged the beer could have a different flavor profile depending on how old it is. The wild yeast, brettanomyces, evolves flavors over time, in a good way (for the most part). The more fruity strains mellow the beer out so well and provides a layer of softness to the beer. Some funkier types put off a heavy barnyard funk flavor, but with time it gets more subtle. Then again, there are some that produce some pretty awful smells over time. But that is usually do to oxidation at packaging, and turns your barnyard funk into aromas of poop.

Not going to make the release on Saturday due to other plans. I will be there Monday 19th, as I am not worried about DDH Ghost selling out. Ha - OJD is still stacked high and it’s a great beer. Without proxy’s this event will not sell out.

I’m more interested in the Coconut Reve. Cheers!
