Sure Cajun you got me. What a wizard? How did you know I wanted to invest several thousands of dollars to open up a sandwich shop in our little old country town. This sandwich is my ticket to a rich retirement. With all the information I received from this post, Darrel's better look out.

Thank you for the nice folks who tried to help me.
I made the sandwich today, but the bread was wrong.
My intentions are to make this sandwich for some friends that live out of state. They love my Louisiana cooking.

Because darrels wife told me. Also says they make certain sauces in house on the site. But his wife created the gravies, not Darrell. Same with the butter sauce and jalapeño mayo. He created the BBQ sauce. That's straight from the horses mouth. Maybe she was lying but I doubt it.

Do you know a guy named Joe who works there? I assume he is a manager. Anyway I called Darrels this morning before they opened . I explained that I was a Lake Charles transplant now living in Ga tryyint to recreate their sandwiches. Asked what brand of meat they used. He said they got it from Sysco. The roast beef was Manda but he wasn't sure about the ham and turkey. So there's that.

Yeah for almost any poboy type of sandwich the hardest thing to recreate can be the bread especially if you live out of the area. Darrells bread is different anyway so not sure what would work best.

no I dont anybody that works there anymore. Used to know a ton. I kind of figured the ham and turkey were sysco and pretty sure the cheese is too. The roast beef, I wasnt sure about but I have never noticed the usual markers of being pre packaged roast beef, but kind of assumed it was as its so thinly sliced.
The sausage, I dunno what brand it is. I don't think its homemade, just smoked on site. The brisket, I dunno where they get it from, but I used to see them all the time outside cooking it and the sausage.

I want to know the answer to your question too! All these smart arse answers just listing meats don't even take into account how to make the butter sauce, jalapeño mayo, and gravy. (And yes, I want to make it all, the store bought stuff doesn't taste right!) I'm curious what kind of bread they use and whether they spread butter or clarified butter on it. Do they broil or bake it? Before or after everything goes on the sandwich? How many slices of turkey? Ham? Roast beef? How many slices of provolone? Swiss? American? How much mustard? What ratio of mustard to mayo to gravy?

Order a sandwich "for travel" next time. All meats, cheeses, lettuce and sauces come in separate, portioned packages. Bread will come wrapped in foil. You assemble and heat it yourself, at home.

Even if it’s all Sysco products and whatever, it’s fricking delicious. The whole is much greater than the parts.
