its ham, turkey, roast beef and the three cheeses listed above. Its a brown gravy, jalopeno mayo on french bread.
to the idiots saying its a crappy bread, wtf? I have eaten at a ton of so called amazing po boy places in the nola area, and the bread at darrells is as good or better. In fact they used to make daily runs to Nola and buy the bread in the early days.
I love people saying its all pre packaged meats, thats funny because I have seen Darrell smoking the sausage and cooking th eroast beef plenty of times. But hey Im sure yall know better.
BTW the shrimp and sausage po boys are better than the special.

This board is convinced everything outside of five star restaurants is frozen precooked stuff from Sysco. They actually believe restaurants just microwave TV dinner entrees from Sysco and plop it on a plate.

Look I think it's a fine sandwich and they make it well, but there is no real recipe for this sandwich. I could go to the grocery and get things to replicate it pretty well but we all know sandwiches are better when others make it.

As for whether they make the meat in house, I guess you won't get a solid answer here. But if you look at the menu and the website, the sauces are boasted as made "in house" 5+ times. The bread is referred to as "freshly baked" from a bakery several times as well. But nowhere is the cooking of the meats on site mentioned at all. I find it hard to believe they'd pass up the opportunity to use taglines like "falls apart" and "cooked to perfection in house" if it was cooked on site. So my uneducated guess is that it isn't.

I have personally driven by and seen darrel himself in years past cooking the meats. He was always cooking the brisket and sausage outside. I have never worked there but I am 95% sure if he is smoking the brisket and sausage that he could easily manage to cook the roast beef inside since it isnt hard and also the roast beef does not have the usual signs of being a pre packaged product.
Now I have no idea on the turkey and ham. But i know they make the gravy in house daily. That is a fact as in the early days it was different and they even mention trying different ones until they got the recipe right.
