Yeah, it's overrated and I don't make it often. Once every few months though, I make a creole Jambalaya. I don't go overboard on the tomato, just enough to keep it moist.

I think it's great for what it is. A fun to cook pot of food that can cheaply feed a ton of people and provide the cookers an environment super condusive to pounding beer. Thats the beauty of a jamb to me. The eating it is just lagniappe.

On the real, I like the Creole jambalaya that coops in the French quarter makes.

The best jambalaya I've ever had was Creole jamb with shrimp and ham. Great combo. Unfortunately, my sister has no memory of making it, so I have no recipe. (And no desire to make it.)
