Have always preferred the creole version having grown up in N.O. Having lived in Gonzales for a year, I learned to appreciate the brown stuff.

Yeah, it's overrated and I don't make it often. Once every few months though, I make a creole Jambalaya. I don't go overboard on the tomato, just enough to keep it moist.

I think it's great for what it is. A fun to cook pot of food that can cheaply feed a ton of people and provide the cookers an environment super condusive to pounding beer. Thats the beauty of a jamb to me. The eating it is just lagniappe.

I would rather eat that than a dry brown jambalaya. I would prefer a good brown jamb to that though. Either way, jambalaya is the most overrated of the South La staples, imho.

This may be the first time I've agreed with any of balls' assertions about South Louisiana cuisine. All of these statements are true.

I've got coonass family, inlaws and friends. And I was raised only a couple hours from there. I'm not that disconnected

On the real, I like the Creole jambalaya that coops in the French quarter makes.

The best jambalaya I've ever had was Creole jamb with shrimp and ham. Great combo. Unfortunately, my sister has no memory of making it, so I have no recipe. (And no desire to make it.)

I don't get this comment. Paella doesn't have tomato in it and the cooking method is completely different.

I don't care for tomatoes and rice. Now if you want to make a creole pastalaya, then be my guest

Until I saw it on this board, I though pastalaya always had tomato in it.
